one thing i will go to bat for is the used of processed cheese products in certain sorts of hot sandwiches, like american cheese on a hamburger or cheez wiz in a cheesesteak they're not "cheese," they're just a moist, savory sauce in semi-solid form

and they do an excellent job binding the overall sandwich together and transporting the other flavors in the dish to your tongue

I got judged by Philly people I was with who preferred provolone and I’m like “You do you, but this is the only town I can actually order Whiz in, so I’m getting it and enjoying it thx” It was delicious.

Cheesesteakes were in fact invented long before cheez whiz was invented so an "authentic" cheesesteak has real cheese It's just not authentic if the meat isn't mostly gristle and fat
