Do write ins for the replacement and votes for the dead person both get counted in that scenario or is only one method ‘correct’? Or is it a crapshoot based on what random officials/judges feel like doing

If the RNC were unable to establish a quorum or their vote somehow deadlocked (I don't know exactly how it works) before December 14 then yeah I guess that would constitute a genuine constitutional crisis

It might be the state parties actually doing the choosing. Ideally they'd agree, but it's not guaranteed.

Could they basically use this power to elect anybody they want? Pick somebody to run the election and then that person “bows out” for some random reason and the GOP chooses whomever they want? Could they do that?

They can't do it *at will* but if the winning candidate in the primary withdrew then sure in theory There was a bizarre conspiracy theory going around Twitter that the DNC only let Biden win the election so they could replace him with Hillary
