So wait, is it that they're called "piskies" in Cornwall and this was corrupted to "pixies" in England or am I misunderstanding what I'm seeing online

Piskies is Cornish. English “Pixies” is a related word, but probably not a direct corruption I think.

Well, Wikipedia says the origin of the word "pixie" is unknown, but seems to have been a word people started using around Cornwall and Devon that spread outward It even says that Terry Pratchett's pun "pictsies" might have actual truth to it
