watching ENOLA HOLMES with @cearo_thyme got me thinking I have no fuckin clue what the difference between a Marquis and a Marquess is, or in what if any contexts other than RHCP songs the word is pronounced "mahr-KEE"

Pretty much The only reason this is complicated is that for whatever reason, outside the UK other English-speaking countries decided that "marquis" was the "generic" spelling we use to describe the overall concept internationally

Basically "marquess" is a deliberately Anglicized way to spell/say it, and in other countries where we don't have our own marquesses people don't like it - the "ess" makes it too easy to mistake for a feminine title (a female marquess is in fact a marchioness)
