I thought I could get fiber internet but apparently we can only get "fiber to node" which means it stops a mile from our house, at which point I assume they load all the data onto 3.5 floppies and a neighborhood kid skateboards them over to us

If we built a nationwide fibre network in 2000, many last miles would be sorted.

Companies can compete for customers in the last mile, but the cost of building out to every house to honor a franchise agreement is more than the revenue that can be raised from splitting customers in areas with low density. Which is why the profit motive fails for internet.
