Question: Why does it seem as though there are a thousand conservative think tanks but so few liberal ones? I feel like there's a piece of political policy history I'm missing here.

Remember they're not conservative think tanks - they're radical authoritarian think tanks. There's nothing conservative about what they do. They exist to produce propaganda to support their core ideologies of wealth and white superiority. A very focused mission.

Alright. Sure. It still doesn't explain why there are so many of them and so few liberal ones.

They are an intentional strategy for corporate interests to spend money to directly get policy they want by doing an end run around the barriers in older institutions like universities meant to prevent them from doing exactly that

It's the whole thing where universities and older research institutions are seen as having a "liberal bias" precisely because a corporation can't just donate $20 million and then demand they start teaching students and producing research that benefits them

(Although that's happening now too, eg the econ department at George Mason being funded by the Kochs)
