I know there are often pragmatic reasons for this but I kind of feel like modern animation/sequential art has verifiably demonstrated that in fact the standard biological range of human hair colors actually sucks and very saturated colors are strictly aesthetically superior

Pigments aren't that easy to organically synthesize, which is why dyes were precious in the ancient world Most bright, vibrant colors can't be made by animals, they're either acquired from plant sources in their diet or they're actually structural coloration

"Structural coloration" means the color comes from the macro scale properties of the organ The iris of someone with blue eyes or the feather of a bluebird is blue the way the sky is blue, via diffraction -- the stuff it's made of is clear

Actual bright blue dye is almost impossible to get or make from organic sources, the ancients had to make azure from an inorganic source, lapis lazuli or azurite

Indigo is almost as good, and is extracted from the leaves of plants, but it isn't that really bright saturated blue, it's a dark neutral blue (traditionally used to make blue jeans etc)
