I mean it's not the ONLY reason The point was that men are completely safe from becoming zombies but the plague means the human race will die out in one generation (a la Cuarón's Children of Men) unless they can find a cure So Ellie represents hope

It would kind of be the point, like she symbolically represents that so you have all these thoughts about her growing up into a mother and being the center of a family, and then you get the horrific reveal she's actually going to be a human sacrifice and die as a child
