Especially because in modern Hollywood, extra running time is VERY expensive, and so much emphasis is placed on "efficiency" It's very hard to just enjoy a scene and not immediately pick up on "This scene was designed to convey X, Y and Z pieces of info within one beat"

@BootlegGirl talked about that modern AAA games almost universally use to keep players from getting frustrated and to manage the difficulty curve

I think this is why I fell hard a decade or more ago for certain "cheap tricks" like killing characters at "inappropriate" moments and protagonist switching.

Or in games (and really only original Deus Ex has really done this) letting you change how the story goes but not telling you you can do it (like have an NPC you aren't prompted to attack but you can kill and if you do it changes things)

I think there's a new kind of magic you get in exchange: that of seeing skillfully-constructed narratives and the specific techniques which creators may use (or misuse) to produce specific emotional/storytelling effects. Not to everybody's taste but it helps me enjoy more things.

Yes and no. A friend of mine is like that with movies (being able to immediately deconstruct frames/color schemes/shot compositions etc...) and it drives me batty to listen to her talk that stuff when I'm, you know, *watching the goddamn movie people doing goddamn Things*

And for the longest time I figured this killed some of her enjoyment of movies ; but in truth it just opens a different layer of appreciation. You don't get wowed by the same things, but you can still get wowed a lot.
