      Like do you know how mold works Visible mold is just the reproductive organs of a huge network of invisible fibers spreading rapidly throughout any organic material it can eat The roots of mold go way way deeper than the roots of a tree

      Yet it’s perfectly fine for most people to eat blue cheese, and being excessively careful about not ingesting microbes comes with its own set of problems Homemade or homestyle jam is gonna have mold. End of story

      Look you know the production of blue cheese these days is tightly regulated, right, and they actually inject the spores they want to try to make sure it doesn't grow the wrong ones It's not saying "Fuck it eat whatever you want it won't hurt you"

      Roquefort cheese can in fact "go bad", you have to eat it within a certain time frame If you let it fully "spoil" (by, say, leaving it in a warm place for a long time) the waste products the mold makes are a toxic carcinogen

      Mycotoxins are a major reason to stay away from "spontaneous blue cheese" The strains approved to make commercial blue cheese were chosen because they're relatively low-toxicity

      I’m not talking about “spontaneous” blue cheese. If you don’t want to eat foods that have any invisible mold on them, you won’t be eating very much.

      The jam at Sqirl did not have invisible traces of mold somewhere in it, it had a huge, highly visible layer of mold growing on it an inch thick

          I am not a credentialed expert on mycology nor on food safety But I think it is common sense to say that scraping off the visible mold and then saying the remaining jam is just as clean as a batch of jam that never had mold in it at all is highly dubious
