Guys guys I don't mean that jam *tastes bad* if you don't add enough sugar, although that's true enough I mean that the reason jam was invented, the reason jam keeps fruit edible after it goes out of season, is that sugar slows the process of spoilage

If you take the sugar out of jam and you just put some mushed up strawberries in a jar, they'll grow mold That's how jam works, that's *why* it has the sugar content it does, you can't just go around "improving" things without consequences coming from it

We say a lot of stuff about how cooking is both art and science but obviously the science comes first You have to know how the food *works*

The point of junk is that it is bad for you.

Jam and pickles aren't "junk" and they're not "bad for you." People have been eating them for literally millennia. Fucking water will kill you if you insist on drinking liter after liter.

literally the entire point of jam is "we want the experience of eating sweet fruit when the fruit is not available"
-
There’s a reason that preserves are called that, after all.

You can probably make low sodium pickles with potassium chloride. Maybe just don't eat them really fast.
