... and it’s not like jam is *hard*. Except when you’re using a faulty recipe. Like one without enough sugar — the preservative (along with acid). There are recipes, written in English, that pre-date *canning*. They’re online. Gutenberg has them. (Eliza Acton’s are best.)

I was taught (well, I learned from the internet a long time ago) that the only thing you can scrape mold off and eat it anyway is hard cheese. Anything else, throw the whole thing out, because you don't know how deep that mold goes.

The narcissism really leaps off the page. She thinks people will be fascinated by a dissertation about her life and her struggles, when what they're actually looking for is an explanation of why the restaurant fucked up so badly and what's going to be done to fix it.
