Grits are more prevalent because of the movement after slavery. Corn became a dominant crop that was easy to grow a lot of, and was used to make cornbread, grits, mush, pancakes, etc. so that’s why it’s more popular here as opposed to rice

Yeah rice is a high-yield crop but also a highly labor-intensive crop, in the US it's associated with the Deep South and with particularly cruel slave labor (there was heavy importation of enslaved workers in South Carolina and Georgia specifically from cultures that "knew rice")
