On the other hand, I remember a driving instructor who confidently informed me that it was scientifically impossible to eliminate blind spots so those stick-on convex mirrors are a scam.

I suspect there's some level of path dependence there - no-one's taught the correct way to adjust their mirrors, so it is extremely important to make sure that everyone knows they have to turn around and look over their shoulders before changing lanes.
