We’re watching through Columbo and in one episode, he says he can’t book anything except an omelette, in another, he’s a gourmand who knows many cuisines and can cook complex dishes and now I don’t know what to think.

In all seriousness it's important to note that Columbo is about a working-class detective investigating the crimes of the upper class. His act is probably more about survival than showmanship.
