There's also the issue that unless they have some sort of immune system, they're going to fall apart pretty soon from attack by decay bacteria and the like.

Almost all zombie shows/movies, etc have this problem. It's because the original idea of "zombies" is that they're dead corpses supernaturally come back to life, but most modern zombie-themed media want to ditch the supernatural explanation in favor of a virus explanation.
