Immunity itself isn't permanent, and the virus itself mutates, which is why influenza as a general class of viruses is always around (endemic) But a *pan*demic means the number of infected is constantly increasing exponentially and that mathematically has to burn out

In order for a virus to do the dance of you getting better and then the virus coming back to reinfect you it needs to be able to jump to a different host somewhere else to wait out your immunity (or have time to mutate) With a pandemic, you just run out of new people eventually
