I'm gonna be honest, after having thought about it my whole life, I'm going to have to actually side with my north Chinese heritage (and Ayn Rand) against my south Chinese heritage and say that wheat is just a better cereal crop than rice Sorry but gluten is very good
I did in fact read a whole book in college about how China's population explosion in the early modern era (1500s-1600s) was partly due to the introduction of maize Which never made it into Chinese cuisine as such, but cornbread became a popular food for the very poor

There was a slang term referring to a hunk of cornbread as "a poor man's dumpling", which seems apt

(This was starchy maize, which now is only fed to animals - sweet maize was a novelty introduced to East Asia in the late 20th century which is why you see yellow corn kernels as a topping on random stuff in China, Korea and Japan)
