the genie never actually granted aladdin's first wish. he didn't make him a prince. he just dressed him up like one.

What's more interesting is Jafar's wish to "become Sultan", which just has the Genie put the Sultan's clothes on Jafar and yet somehow causes everyone to just agree that they have to obey him except Jasmine

The fan theory about the cartoon is that the Genie have Aladdin all the trappings of princedom to be nice but didn't magically change his heritage because he technically already is a prince, since his dad is the King of Thieves

I havent seen the sequels, but is King of Thieves an actual hereditary title, or is it just a badass epithet that Aladdin's father claimed for himself?

It's an actual thing, the Forty Thieves are an ancient secret society of elite criminals in this universe, but it's supposed to be by merit rather than hereditary (Aladdin has obviously inherited his father's skill though)
