Ok now that I understand some stuff about Japanese pluralization or lack thereof, can someone explain to me why "First Children," etc. are more "literal" translations than "Child"? X の子供, why is that plural?

They don't say 子供 ("kodomo") in the original, they literally say the English word "children"

Oh. That's... I still don't have a handle on how and why Japanese decides to borrow English words for things they have words for

In this case it's an arbitrary writing decision to use foreign language to sound cool They had an American guy consulting on the show who told them using the English word "children" in the singular wasn't cool or ominous, just wrong, but they didn't listen

The German dialogue they give to Asuka is similarly judged by native German speakers as being terrible

Ironically, apparently in the new German dub you can tell when Asuka switches from speaking Japanese to German because her grammar gets worse (because they insisted that the actual German dialogue in the original script stay untouched)
