It kind of weirds me out to see "Pokémon" written that way because while the Japanese ke is pronounced like that, we don't usually attach that accent to any other loan words from Japanese that use e sounds

Yeah it's just because without the accent people say "pokey-mon" or just "poke-mon" In fact several of the dub actors in the very first episodes of the anime still do say "poke-mon"

It's how people tend to say it, but I think there was pushback from the brand. Certainly the famous theme song from the cartoon says "Poke-ay-mon"
