If you are editing and long-press on the text, after about 4 seconds it will let you drag the cursor around rather than re-arrange rows.

Also good to know, thanks (and also a completely hidden gesture – both physically hidden and, in this case, temporally hidden).

Try touching even harder to select text

Oh, behave! :) (Seriously though, all these hidden gestures are also a nightmare for accessibility – I mean consider people with motor difficulties differentiating between various touch sensitivities. I have trouble as is with such overloaded functionality without motor issues.)

The fact that the amount of force sometimes doesn’t trigger the correct behavior makes it all the more confusing and inaccessible. iOS definitely contains a ridiculous amount of hidden features…

I’m torn. As long as it’s things you can do some other way too I mostly am for. But every time I learn that I missed something I get pissed.

I don't think it's really a problem for shortcuts, which is pretty much everything that 3D Touch is used for. It's like context menus on desktop OSes – they're convenient, but you should never expose functionality solely that way.

The more I use iOS, the more frustrated I get with things like this. It's a shame, really, since Android is a no-go...
