layman question: but if the data is encrypted in VPN (per definition), can the provider see og gain control over it?

In a nutshell, while it protects your traffic from observation by your ISP, you’re not protected from a malicious VPN provider.

With a VPN you push the problem one step further down the pipe. You still have the same trust issue, but now with the VPN provider.

Exception, IMO, is VPN-operators providing "for free" due to deeply held (shared) political opinion. Trust that more than commercial.
