Not fully accurate - Servers are needed. Privacy by Design is about avoiding creating personal data, not about avoiding data as such.

‘Servers’ not necessary in peer-to-peer. Always-on encrypted nodes necessary training wheels/backups for the network.

Sure. But making it Peer-to-Peer does not make it Privacy by Design, e.g. blockchain - expensive, not secure and extremely overhyped

What makes it Privacy by Design is the inability to link a transaction with anything else you do, mainly identity. P2P part of network
