@aral It's synced via IMAP. In a way, the notes app is a fancy email client.
Can someone please tell me why I need to create an iCloud email address to use Notes with iCloud?

@aral are you sure you can’t? Look in “Mail, Contacts, Calendars”, select the IMAP account you want and turn the notes toggly button on -
