(incidentally they baked on parchment paper in a different sheet pan, which got soaked with rendered fat... cooling on the rack gave them a nice crispy bottom

Do you use puff pastry?

yep! I remembered puff pastry coming in thin sheets that you unfolded, but this was just a big block of pastry that I had to roll out quite a bit once it defrosted. which was still really easy, it was nice to work with and turned out great
