Their pulled pork tacos are a perfect pairing to the IPA. This vibe--real roughneck America, refined beer culture, exotic cultural syncretism with 'Hispanidad', exposed brick/distressed-wood aesthetics--is what every craft beer bar in Europe tries to mimic in its hamfisted way.
Craft beer and (non-obsessive) foodie culture are two very good trends that have made many places in America more pleasant to live in than before. A definite quality of life improvement.
When I get bummed thinking that the internet is turning everything strong pareto, massively increasing wins for a shrinking few, I try to remember that beer is tending opposite. Used to be 3-7 breweries in the US, now there are hundreds or thousands.
