My guess: they feel anxious/frustrated at society "policing" speech; present struggle is bc it enters "yet another" domain.
Consciously or not, all just part of the culture war around safe spaces, narratives, etc. ~"Shots fired; gotta return fire."

Ofc as you point out the specific objection's absurd, but that's flag waving. eg "Saying 'happy holidays' is anti-Christian!"

the problem imo was that the joke was 'punching down.' crits can be *way* more cruel than those docs, though.
