Relatively few people get to work at a high-quality org, though. Are there ways of teaching this in schools?

Tons of people do. I had/have lots of drop-out colleagues at both Apple and Khan Academy.

Interesting do you know what their career paths were? I haven't seen a lot of people with out some formal CS education there

They taught themselves, then built a portfolio. Portfolio's all that matters beyond a junior level as far as I'm concerned.
