Today's dinner: Snake River Farms flatiron s/v 10h@55°C then seared stovetop in smoking peanut oil. Came out GREAT.

The flatiron was actually a reasonably priced cut at $40. (Still not cheap, but not nearly as spendy as their tenderloins.)
