Perhaps my beef (har har har) is with the American idea that salad means soggy veggies + acrid unctions.

Oh, damn. Those look magical. Then why do people/eateries fuck salad up so often and so profoundly?

Doing a good job with vegetables is harder, requires more improv day-to-day than with (typical) meats, grains.
