Why are there no "standard texts" on designing software interfaces? (or tell me I'm wrong?)
If you want to learn to *build* software, there are excellent and complete texts on the subject. It's not just a tech-vs-art thing: there are standard texts on type, drawing, color, etc.

If you're taking orders… would also love a history of interface design that's goes beyond the typical recap of tech innovations—Mac, web, iPhone, AR (what's next)

Definitely. "Designing the User Interface" does a good job here, though it's focused on the conceptual more than the visual. Would be nice to include the latter too.

Funny how most of these authors are relatively unknown in our field. It's no knock on their efforts, but I'd love to see the topic approached more practically by established, working Designers who headline the field.
Where's our Interaction of Color or Grid Systems?

Reflecting: it's unfortunate that these authors are so unknown in our field. Shneiderman was foundational to direct manipulation, viz, linked representations, hyperlinks, etc. Plaisant likewise for multitouch and infoviz. Yet indeed, not quite "working artists" like Albers.
