I mean did you know that The French Laundry publishes its menus every day—and they change, almost completely, every day? It’s hard to ask for a better guide to what’s in peak season on any given day and what one should do with it, even for home cooks. For free!

One poignant thing I've noticed since the resumption post-pandemic is that the menus change much less significantly day-by-day than they used to. I wonder if they're short-staffed, or if the staff's suffering the same gumption drain so many of us are.

Possibly-related noticing: today's vegetable menu has two asparagus-centered courses—one white and one green! They have an infamous rule that primary ingredients must never be duplicated; I've never seen this before. I guess white and green are different enough not to count?
