Hey , how do/should people outside universities/academic writing careers do adequate research?

I feel nothing like an authority here! But IME, one needs the same core skills of inquiry, synthesis, and experiment. Apprenticeship still seems the best path to those. Para-academics can "skip" some teaching/service-related skills, but require extra around distributing own work.

well the worry isn't plagiarizing but simply not having your work informed by the best work that's been done--I think you have to find a way to access books and article databases, but I don't know how you do that.

At least in sciences, access is easy. sci-hub.se provides free access to all major publications. (It is illegal, but I delight in destroying that industry, and I urge you to feel no remorse)
The bigger challenge is staying connected enough to know what to read.
