Fellow nerds with a combi oven, I’ve been experimenting a lot with roast
and am loving:
Cook: 150° @80% humidity until hits 140°
Dry/hold: 130° @0% until service
Brown: Pull
from oven, preheat to max plus broiler. Brush w oil, return to oven until gorgeous, turning once
