Feels like magic. No effort, but super crispy and super juicy. This is more traditional, but I brine 24h in (per liter water): 4% salt, 2% honey, 2 halved lemons, half a head of smashed garlic, 25g parsley, 5g thyme, 5 bay leaves, 5g peppercorns.
