How do you define "intellectual honesty"? (Especially in a way that differentiates it from regular honesty.)

Honesty is saying what you believe, intellectual honesty is updating your beliefs in the face of evidence. Same thing, different direction?

Oversimplifying a bit but: Honesty: truth comes out Intellectual honesty: truth goes in (goes well with honesty, of course)
