For a while the leading recipe for them was persimmon bread. They told me this before I learned persimmons are fruit. So I spent many days low key disgusted.

Yellow orange, flattened sphere is a future and doesn’t get extremely soft. It’s a little crunchy but also has a long window where it’s ripe enough. Red orange and pentagonal is hayacha. It’s best when soft to very soft. Makes great persimmon muffins.

Oh so I'm amazed this hasn't gotten here yet, but those are different persimmons. North American native persimmons aren't *anything* like Japanese persimmons and the recipes won't even a little bit work.
