Yeah my aunt swears by evap, but I stick to the family recipe which uses cream. I’ve not tried evap yet. I also like the St.John recipe where you make a caramel first and then combine w/ rice+cream+milk, and then bake - but it isn’t my ‘go to’.

Haven’t tried the caramel method, I’ll give that a go. My go-to is usually sticky black rice pudding with coconut cream, but it has to be the right rice. Not always available.

That sounds great! I vaguely remember eating a black rice pudding, but I’ve never made one. Does the black rice give a similar texture to standard pudding rice?

Ideally a bit thicker. It takes 2-3 times as long to cook.

I love using short grain rice (aka sticky rice) and adding some salt. I also love a melted marshmallow or two!

You put some salt in with the sweet rice? I do that too, with black rice. Funny, I didn’t think to try it with white. Never tried marsh mallow with it either! I will. Imagine it would be nice melted on top under the grill so it goes crispy.

I salt almost everything :p it’s great with the white rice. And, yep — marshmallows are a great way to mix it up
