"Data structure and algorithms" courses are like "here's a red-black tree, heap sort, insertion sort and prime sieve" then students come into industry and I'm like "here's Either, fold it"

I only have experience with online courses (hobbyist) and so far came across only a single one which does what you say. It has three parts and language used are Standard ML, Racket and Ruby. It's also the only one that teaches basics of good practices and program design.
