someone with experience guide me: how much of a headache is it to write documents in pseudo-latex?

you mean if i open the .txt file in emacs there are tools to parse occasional latex? or i should learn emacs if i continue to do it in a hybrid way?

with org-mode you can create an org document (like a structured text doc) and export the results to a variety of formats, inc latex. so its an easy way of creating simple latex docs. org-mode also has support for embedded latex, so you can embed latex snippets in org docs

you would need to learn some emacs to do this, but once you've done that, what you're trying to do is pretty easy (assuming I've not misunderstood it)
