My mom has a theory that this used to be related to if the woman who was cooking worked or not. My dads mom always worked so they had thanksgiving at the dinner hour, but my moms mom didn’t, meaning she could do prep work on Wednesday and they had a lunch hour thanksgiving.

Or the reverse. My mom worked afternoons into nights so we had to eat at lunch if we were all going eat together.

My grandmother required every holiday meal be held on the exact holiday at noon with everyone arriving at 10 am to help. We all lived 2+ hours away. I once asked if I could come the night before to help. Answer was no - she didn’t need that much help, just two hours of help.
