I'm wondering what kind of effects this has on server economies when you empty auction houses in so quick a time. Does it turn into a buy-frenzy, or do prices completely flatline because people are desperate to reinvigorate stock levels of certain materials?

Depends on the server size but if you're a competing gold goblin who crafts as they go, you'll likely see a disruption unless you had the foresight to buy before hand. It'd also be a way to handicap competitors as they wouldn't have the mats for things like you did.
