well, how can he know that just from reading 5 lines of text? I picked he but it doesn't mean anything, also in several points of the story several parts change depending which gender you pick. It's just an example

It's not about THESE specific lines of text. It's about the holistic act of writing. Defaulting to "he" pronouns generally implies that via your internal writing process you're thinking of the character as "male." That ABSOLUTLELY has an effect on how you write a character.

So even if you can change the words and the pronouns, your biases are leaking in very likely without you realizing it. And that's sort of The Problem in a general sense.

You have a long catalogue of games. I know your stories. Your production style and outlines always restrict the writers into working with subpar plots and events that don't flow well. Despite "creative freedom", the stories always end up feeling empty and insincere.
