I think this is a general rule across every game genre. However I find that a well balanced difficulty over an easy/hard difficulty creates a far more engaged community of players. Too hard is annoying, too easy is disposable, just right will be remembered (imo at least).

thing is that PS2 has a well balanced difficulty and even difficulty levels :P I had people in the past pick easy difficulty and complain is too easy, others nightmare difficulty and complain it's too hard, etc. It's a mess lol

This is something I don't look forward to with any Game I set up or do. (For example D&D) How hard? Can I adjust it? Say F it and make them suffer thru Dark Souls on steroids? Decisions decisions....
