even considering only dating sims, Roommates is my most popular game and has male/female protagonists and good variety of romances. Love Bites also did very well and beside male/female has also all love interest bisex.

So while the story setting surely has a certain weight, the love interests amount and possibility to choose playable gender seems to be very important if we consider the story only

it varies but on average a RPG sells at least 5-6 times a normal dating sim/VN But as I wrote, it's also because ALL my RPG have many romances + can choose playable gender (and they're all VERY long) so maybe that has also a lot of importance!

I have to admit I've focused almost exclusively on your RPG content. Perhaps you have effectively 2 audiences, RPG players and Visual Novel players and the one is simply bigger than the other?
