i don't really get it, the notarize is not automatically done? we need to pay extra to get notarized??

you need the dev subscription, another way for apple to milk developers. Then you're also forced to use Xcode. The whole process is forcing devs to use their own stuff like if was a console or something, not a computer!

Windows and Linux, I could in theory still export Mac builds that would work on MacOS pre-Catalina but probably in a year or so everyone will have updated. Switch yes but depends on external coders not me, so no clue when they would be available!

I don't think you have to notarise an app that is being sold through the Mac App Store - it's 'just' for anything that's sold outside - so you could still keep titles on Mac - but resign yourself to the 30% app store sales fee.

yes but I'm not using mac appstore at all, I don't want yet another appstore to mantain, too much work for too little
