One of the silliest arguments against easy modes I hear is that games work best at a developer's intended level of challenge. Yeah, sure -- it's often true. But you know what? That sweet spot lies in different places for different people.

I like the idea of doing an easy mode but lock some achievements/optional game unlocks behind a harder difficulty
