It is surprising how few people actually redeem their Steam keys when buying from non-Steam sites. I assumed Steam keys were a big draw.

For bundles, I can definitely see it - but individual, $10+ purchases? I don't believe it. Folks ask for $3 refunds all the time

my point is that "25% of folks play on steam & 75% of folks forgot about their itch purchase" is.. a ridiculous proposition? (even >10% forgot seems.. not in accordance to our data)

I don't know, and it's impossible to know, really. I made a lot of different games since then (like PSCD, a card game). It's not like I know exactly what each user bought on my site/itchio and Steam :D
