As a variant of this, sometimes the weak sidequests take away my enjoyment of a game because I don't have the time / patience to do them and the completionist in me gets antsy.

To some degree this depends on how MANY sidequests there are. Some games you have to eventually recognise that there are too many sidequests and a lot of them are boring (for your personal tastes) and just get on with what matters. Others, you need that XP/loot!

for me depends on the sidequest story, but also towards the end I tend to skip them because I want to know how it ends :)

I do 80% of the side quests and give up on the really hard / tedius ones.

I don't have as much time as I used to, so I'd prioritize the stuff I find most interesting- any sidequests involving sub-plots or additional lore. Then it's just 'how big is the reward compared to how tedious the sidequest is.'

All the ones that are reasonable. If a quest requires zillions of hours of grinding for a mild reward, I usually pass.
